Roasted Chicken and Veggies

You can never go wrong with serving your roasted chicken with roasted veggies when catering for friends and family! 

There has always been something homey about roasted or fried chicken and sometimes after a long day rushing through lectures, all I need is some comfort yet healthy food. 

Ingredients

Mixed chicken portions 

Robertson chicken spice 

Robertson herb spice 

Paprika 

Aromat 

Olive oil 

Mixed veggies (pre-cut and cleaned)

Heat your griller or over at 230' degrees 

Prepare your oven tray by lining it with olive oil. 

In a bowl, spice your chicken and leave it to marinate for 1hr or overnight. 

Roast chicken for about 30 mins, monitoring it as you go along. 

Add mixed veggies and roast with chicken for an additional 10mins.

(Serve with savory rice,qede or fresh homemade buns)
